What Melbourne Markets Taught Us About Menu Planning
Why the menu gets written after the morning delivery lands, and what that actually means for the dish you will be served at Davelona.
Davelona has received your message and the booking desk will read it personally and reply within one business day. If your booking is for the next 48 hours, please call the restaurant directly so we can confirm straight away.
Your enquiry has landed in the same inbox the chef checks between prep jobs. Nothing is automated and nobody at Davelona uses a call centre, so what you wrote will be read by a person who can actually act on it.
If you mentioned allergies or a celebration, we will flag it and include any questions in the reply so you do not have to write back and forth. For groups of ten or more we usually suggest a set menu instead of à la carte, and we will send an example with the reply.
Usually within a couple of hours, always inside one business day. Same-day and next-day requests get pulled to the front of the queue.
A short reply with what we can offer on the date you asked for, what the menu might look like and how to confirm the booking.
Written confirmation by email with the party size, time and any dietary notes. For the chef's table you will also get the menu by text on the morning itself.
Fastest for last-minute tables and anything you would rather talk through.

What happens across the four hours of a masterclass, so you know before booking whether it suits the person you are sending the form for.
The two main experiences sit in the same kitchen but feel nothing alike. Here is the short version of each.
Seven courses over roughly three and a half hours for six to fourteen guests. The menu is written the morning of your booking and texted through before you arrive.
Four hours at the bench with a maximum of eight students. Two dough bases, five shapes, sauces built alongside, and you eat what you made at the long table when the cooking is done.
The things people usually ask us in the second email, after the first enquiry has gone through and they are thinking about the details.
Metered parking on the side street, free after 6pm. Centre car park is a five minute walk and open until midnight.
Three minutes from the Chadstone tram stop. Last tram runs well after service finishes on weeknights and weekends.
Step-free entry, ground floor accessible bathroom and space between tables. Mention it in the form and we will set up accordingly.
Any amount from $50 to a full room buyout, valid for three years and extendable once if you ask before expiry.
Every rate for the dining room, the chef's table and the pasta school sits on one page, with deposits and cancellation rules set out plainly.
